(raw vegan)
1 daikon root, sliced with vegetable peeler (long wide strips)
1 cucumber or zucchini, sliced with vegetable peeler (long wide strips)
1 carrot, sliced with vegetable peeler (long wide strips)
1 red bell pepper, sliced (julienne)
1/2 avocado, sliced (julienne)
1 cup of broccoli sprouts (or) handful of spinach leaves or cilantro (substitue)
1/4 cup dulse (rinsed)
1 lemon
2 tbls raw sesame tahini
4 dates (soaked) add to sweeten
1 tbls safflower oil (cold press)
1 tsp ginger (grated)
1/2 tsp paprika
1 oz water

Wash and prepare the veggies.Using the daikon and or cucumber/zucchini slices as your wrap, make a blanket for the additional ingredients but over lap each zucchini and diakon slice a little over each other. Add carrot slices to top with a few strips of dulse. Place red bell pepper, broccoli sprouts or spinach/cilantro leaves for substitue and avocado on one end, sprinkle salt unless you are fasting. You can drizzel the sauce on and wrap tightly until completely rolled or wrap it and drizzel the sauce after. Squeeze a little bit of lemon juice on top and salt to bring out flavor. If you are doing certain detoxing or fasting rather than using a sauce you can simple blend dulse, ginger, avocado, lemon together to make a comfort dip and texture for the enjoyment or you can use simple lemon and yukon.
The sauce recipe calls for 1/2 lemon, 2 tbls raw sesame tahini, 4 dates, 1 tbls safflower oil, 1 tsp ginger, 1/2 paprika, if you like it spicy start with 1/2 tsp cayene), 1 oz water. Put all ingredients into the vitamix [blend]. You may add salt to change flavor and water to control density of texture.
Remember to be creative you do not have to limit yourself. You can make the rolls out of diakon and simply enjoy cucumber in the roll. Play around with it and see what you have to substitute if you do not have all the ingredients. You also do not have to use raw tahini, you can simple blend up sprouted sesame seeds instead. For those peanut butter lovers, you can also use sprouted wild jungle peanuts. They are the only peanut known to grow out of the soil. They do not contain the carcinogenic aflatoxin that is found in all known peanuts. Not all peanuts carried this alflatoxin at one time. Do to conditioning to soils, climate change, and evolution of bacteria on a global scale, this condition has occured and all peanuts that grow in the ground became contaminated. Aflatoxin
Best served immediately, I wouldn't wait. Try not eating while you make. Usually by the time Im done making meals, Im full. It always taste better over night just remember that.
