I wanted to introduce you to a long time
ingredient that is used in many alternative and holistic diets. The Celeriac or
other fun names, Celery root, Knob Celery, and German celery. It is a member of
the Parsley family and have much of the same benefits. The reason for this
selection is Celeriac is a winter root vegetable which many people have not
heard of or are familiar with. I love it and here we are approaching winter. Celeriac is rich in vitamins A, C, K and E, essential oils, carotene, microelements and other nutrients.
Celery root has excellent calming, analgesic, antiseptic, anti allergic and other
therapeutic properties. It superiority is to support digestive system, including
ulcers, gastritis, indigestion, and people whom lack an appetite. Health
benefits of celery root also embrace the powers of this natural remedy to
improve the function of our liver and bladder, calm down arthritis pains and get
rid of swellings, improve our vision and stimulate metabolism.
They say just a cup of celery root juice with a tsp of raw honey stirred in can help a person not over eat before a meal.
You can purchase celeriac year-round in some larger supermarket chains and in specialty grocery stores. I buy mine at Maddy's Market in Calabasas. It may seem unfamiliar because this is a Mediterranean and Northern European vegetable. So that's far from home. It is a real easy one to grow and grows just like celery. Its good to consume
celery root regularly. Consumption of celery is linked to improving memory and
mental abilities. It lowers risks of inflammations and ailments connected with
the function of urinary system. It has a great amount of potassium to relieve
bloating in the body. Celery will help the processes of fat burning and this way
assist in speeding up weight loss.
Once you have purchased your celeriac, you
can safely store it in your home for up to one week provided that you remove its
stalks and leaves first and store the root in your refrigerator. But save the
stalks for the juice.
