Broccoli is known to be a classic vegetable on American tables although Rapini is much more common on Italian tables. Composed of leafy stalks, broccoli rabe is not a type of broccoli it’s a cabbage and is more closely related to mustard greens or turnips. Pronounced “broccoli rob” or “rapini” and often going by its nickname rabe, this vegetable is available year-round but best in the winter. You can reduce the bitterness of rapini by briefly blanching in salted, boiling water and then placing in ice water. But you don’t want to do that. A bit of crushed red pepper also nicely balances out rabe’s bitterness. Bitter’s help make your digestive process more efficient so you should try to leave it alone and develop a natural craving for them. The bitter herbs stimulate the enzymes and fluids your body needs to digest food quickly and efficiently. At first, the taste of herbal bitters may not seem agreeable. Coriolus versicolor (Trametes versicolor) "Turkey Tail" is the most well-studied mushroom in the world. This is the leading anticancer drug's natural source in the world today.
